Ingredients
- Beef sirloin or tenderloin1.5 lbs
- Butter4 tbsp
- Yellow onion1 large
- Mushrooms (cremini, shiitake)1.5 lbs
- Sweet paprika1 tbsp
- All-purpose flour2 tbsp
- Beef broth1 cup
- Sour cream1.5 cups
- Saltto taste
- Black pepperto taste
- Fresh chivesfor garnish
- Mashed potatoesfor serving

Slice beef thinly against the grain. Season with salt and pepper.

Melt 2 tbsp butter in a large skillet over medium-high heat. Brown beef in batches, then remove and set aside.

Add remaining 2 tbsp butter to the skillet. Add chopped onion and cook until softened, about 5 minutes.

Add mixed sliced mushrooms and cook until browned and tender, about 10-12 minutes.

Stir in sweet paprika and cook for 30 seconds until fragrant.

Sprinkle flour over the mushrooms and onions, stirring to coat. Cook for 1 minute.

Gradually whisk in beef broth until smooth. Bring to a simmer, scraping up any browned bits.

Reduce heat to low. Stir in sour cream until well combined and heated through. Do not boil.

Return the beef to the skillet. Season with salt and pepper to taste.
