- Spicy Italian sausage (casings removed)1 lb
- Bell peppers (mixed colors, e.g., red, orange, yellow)2 large
- Broccolini1 bunch
- Garlic4 cloves
- Olive oil2 tbsp
- Dry white wine (optional)1/4 cup
- Saltto taste
- Black pepperto taste
- Red pepper flakes (optional)1/2 tsp

Slice the bell peppers into strips. Trim the tough ends off the broccolini and cut into bite-sized pieces. Mince the garlic.

Heat olive oil in a large skillet over medium-high heat. Add the spicy Italian sausage and cook, breaking it up with a spoon, until browned and cooked through. Remove sausage and set aside.

Add the sliced bell peppers to the skillet and cook until slightly softened, about 5 minutes.

Add the broccolini and minced garlic to the skillet. Cook for another 3-4 minutes until broccolini is tender-crisp and garlic is fragrant.

If using, deglaze the pan with white wine, scraping up any browned bits.

Return the cooked sausage to the skillet. Season with salt, black pepper, and red pepper flakes (if using). Toss to combine and heat through.
