Ingredients
- Sushi rice2 cups
- Water2 cups
- Rice vinegar1/4 cup
- Sugar2 tbsp
- Salt1 tsp
- Canned tuna (in water, drained)2 cans (5 oz each)
- Japanese mayonnaise1/2 cup
- Sriracha2 tbsp
- Soy sauce1 tbsp
- Nori sheets (cut into strips)2 sheets
- Toasted sesame seeds1 tbsp
- Green onions (sliced)2 tbsp

Cook sushi rice according to package directions. While rice is hot, gently mix in rice vinegar, sugar, and 1/2 tsp salt. Let cool slightly.

In a bowl, combine drained tuna, Japanese mayonnaise, sriracha, soy sauce, and remaining 1/2 tsp salt. Mix well.

Spread the seasoned sushi rice evenly in the bottom of a greased 8x8 inch baking dish.

Spread the tuna mixture evenly over the rice.

Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until heated through and lightly golden on top.

Garnish with nori strips, toasted sesame seeds, and sliced green onions before serving.
