- Eggplant1 large
- Ricotta cheese15 oz
- Parmesan cheese, grated1/4 cup
- Egg, beaten1
- Dried Italian seasoning1 tsp
- Saltto taste
- Black pepperto taste
- Jarred marinara sauce24 oz
- Pre-shredded mozzarella cheese1 cup

Preheat oven to 400°F (200°C).

Slice eggplant lengthwise into 1/4-inch thick strips. Brush with olive oil (if available) or bake directly until tender.

In a bowl, mix ricotta, Parmesan, beaten egg, Italian seasoning, salt, and pepper.

Spread marinara sauce in the bottom of a baking dish.

Place a spoonful of ricotta mixture on each eggplant strip and roll up.
