Ingredients
- Cooked brown or green lentils (canned or pre-cooked)2 cups
- White rice1 cup
- Yellow onions2 medium
- Olive oil2 tablespoons
- Water or vegetable broth2 cups
- Ground cumin1 teaspoon
- Saltto taste
- Black pepperto taste
- Fresh parsleyfor garnish

Cook rice according to package directions.

While rice cooks, thinly slice onions.

In a skillet, heat olive oil over medium-high heat. Add onions and sauté until softened and lightly golden, about 5-7 minutes. Stir in cumin and cook for 1 minute more.

Add the cooked lentils to the skillet with the onions. Stir to combine and heat through for 2-3 minutes.
