Ingredients
- All-purpose flour2 cups
- Warm water3/4 cup
- Scallions1/2 bunch
- Vegetable oil3 tablespoons
- Salt1/2 teaspoon
- Black pepper1/4 teaspoon

In a bowl, combine flour and salt. Gradually add warm water and mix until a dough forms. Knead briefly until smooth. Let rest for 10 minutes.

Finely chop the scallions.

Divide the dough into 4 portions. Roll each portion into a thin circle.

Brush each circle with oil, sprinkle with scallions and pepper. Fold the circle in half, then in half again to form a triangle. You can also roll it up and coil it like the traditional method if preferred.

Heat 1 tablespoon of oil in a skillet over medium heat. Pan-fry each pancake for 3-4 minutes per side until golden and cooked through.
