Ingredients
- Ground turkey1.5 lbs
- Kidney beans, canned, drained and rinsed2 cans (15 oz each)
- Diced tomatoes, canned1 can (28 oz)
- Onion, chopped1 large
- Bell pepper (any color), chopped1 large
- Garlic, minced3 cloves
- Chili powder2 tbsp
- Cumin1 tbsp
- Smoked paprika1 tsp
- Oregano1 tsp
- Cayenne pepper (optional)1/4 tsp
- Chicken or turkey broth1 cup
- Olive oil1 tbsp
- Saltto taste
- Black pepperto taste

Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess fat.

Add chopped onion and bell pepper to the pot. Cook until softened, about 5-7 minutes.

Stir in minced garlic, chili powder, cumin, smoked paprika, oregano, and cayenne pepper (if using). Cook for 1 minute until fragrant.

Pour in the diced tomatoes (undrained) and chicken or turkey broth. Add the drained and rinsed kidney beans.

Bring the chili to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes, stirring occasionally. For deeper flavor, simmer for 1 hour or longer.
