Ingredients

  • Ground turkey1.5 lbs
  • Kidney beans, canned, drained and rinsed2 cans (15 oz each)
  • Diced tomatoes, canned1 can (28 oz)
  • Onion, chopped1 large
  • Bell pepper (any color), chopped1 large
  • Garlic, minced3 cloves
  • Chili powder2 tbsp
  • Cumin1 tbsp
  • Smoked paprika1 tsp
  • Oregano1 tsp
  • Cayenne pepper (optional)1/4 tsp
  • Chicken or turkey broth1 cup
  • Olive oil1 tbsp
  • Saltto taste
  • Black pepperto taste

Steps

    Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess fat.

    Add chopped onion and bell pepper to the pot. Cook until softened, about 5-7 minutes.

    Stir in minced garlic, chili powder, cumin, smoked paprika, oregano, and cayenne pepper (if using). Cook for 1 minute until fragrant.

    Pour in the diced tomatoes (undrained) and chicken or turkey broth. Add the drained and rinsed kidney beans.

    Bring the chili to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes, stirring occasionally. For deeper flavor, simmer for 1 hour or longer.

    Season with salt and black pepper to taste.
