In a large bowl, whisk together flour, sugar, instant yeast, and salt.

Add lukewarm milk and melted butter. Mix until a soft dough forms.

Turn dough onto a lightly floured surface and knead for about 5 minutes until smoother.

Place dough in a greased bowl, cover, and let rise for 45 minutes in a warm place.

Mix raisins/sultanas with mixed spice for the filling.

Punch down the dough and roll into a rectangle (approx. 25x35 cm).
