Ingredients
- Pork shoulder, cubed500g
- Garlic, minced5 cloves
- Onion, chopped1 large
- Annatto seeds (achiote)2 tbsp
- Tomato paste3 tbsp
- Sweet potatoes, cubed1.5 cups
- Green peas1/2 cup
- Red chilies (siling labuyo), sliced1-2
- Soy sauce3 tbsp
- Pork broth or water1.5 cups
- Sugar1 tsp
- Water1/2 cup
- Saltto taste
- Black pepperto taste
- Cooking oil3 tbsp

In a small pan, heat 1 tbsp of cooking oil over low heat. Add annatto seeds and cook for 5 minutes until oil turns deep red. Strain and discard seeds, reserving the annatto oil.

Heat remaining 2 tbsp of cooking oil in a pot over medium heat. Sauté garlic and onion until softened.

Add pork cubes and brown them. Stir in tomato paste and cook for 1 minute.

Pour in soy sauce, pork broth (or water), reserved annatto oil, sugar, salt, and pepper. Bring to a simmer.

Add sweet potatoes and sliced red chilies. Cover and simmer for 30-40 minutes, or until pork and sweet potatoes are tender.
