    For the dough: Combine flour and salt in a large bowl. Make a well in the center and add the egg, oil, and warm water. Mix until a cohesive dough forms. Knead on a lightly floured surface for 10-15 minutes until smooth and elastic.

    Place the dough on a lightly oiled surface, cover with a clean kitchen towel or plastic wrap, and let it rest for at least 30 minutes.

    Prepare the filling: In a bowl, combine pitted cherries, sugar, semolina, cinnamon, and lemon zest. Mix well.

    Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper.

    Stretch the dough: Place the rested dough on a large, floured tablecloth or clean surface. Gently stretch it from the center outwards, using the back of your hands, until it's very thin and translucent, covering the entire surface. Trim any thick edges.

    Spread the filling evenly over the stretched dough, leaving a small border. Sprinkle with semolina to absorb excess juice.

    Carefully roll up the strudel using the tablecloth to help. Transfer the rolled strudel to the prepared baking sheet.
