
Traditional Povitica s Orasima (Nut Roll)

A classic Croatian sweet bread, Povitica s Orasima features a soft, yeasted dough rolled around a rich, sweet walnut filling. It's traditionally baked for holidays and special occasions.

- Yeast20g fresh or 7g dry
- Salt1 tsp
- Walnuts, finely ground300g
- Brown sugar150g
- Milk100ml
- Honey2 tbsp
- Rum or vanilla extract1 tsp
- Egg yolk, for brushing1

Activate yeast in warm milk with a pinch of sugar. Let it proof.

In a large bowl, combine flour and salt. Make a well in the center.

Melt butter and let it cool slightly. Whisk eggs with remaining sugar.

Add proofed yeast mixture, whisked eggs, and melted butter to the flour. Knead until a smooth, elastic dough forms.

Place dough in a greased bowl, cover, and let rise in a warm place for 1-1.5 hours, or until doubled.

While dough rises, prepare the filling: Combine ground walnuts, brown sugar, milk, honey, and rum/vanilla. Mix well.

Punch down the risen dough. On a lightly floured surface, roll it out into a thin rectangle (approx. 40x50 cm).

Spread the walnut filling evenly over the dough, leaving a small border.

Carefully roll up the dough from the long side, like a jelly roll.

Shape the roll into a horseshoe or a round coil and place it in a greased loaf pan or on a baking sheet lined with parchment paper.

Cover and let rise for another 30 minutes.

Preheat oven to 180°C (350°F).

Brush the top with egg yolk.

Bake for 40-50 minutes, or until golden brown and cooked through. If it browns too quickly, loosely tent with foil.
