A classic, rich, and slightly sweet yeast bread, often shaped into a loaf or ring, traditionally made for special occasions. It features a soft crumb and a delicate flavor from eggs, butter, and a hint of lemon zest.

- Active dry yeast7g
- Granulated sugar100g
- Milk150ml
- Eggs2 large
- Unsalted butter, softened100g
- Lemon zest1 tsp
- Salt1/2 tsp
- Egg yolk, for wash1

Activate yeast in warm milk with a pinch of sugar. Let it bloom for 5-10 minutes.

In a large bowl, combine flour, remaining sugar, and salt. Make a well in the center.

Pour the bloomed yeast mixture into the well. Add the eggs and lemon zest.

Gradually mix in the softened butter. Knead the dough on a floured surface for 10-15 minutes until smooth and elastic.

Place the dough in a greased bowl, cover, and let it rise in a warm place for 1-1.5 hours, or until doubled in size.

Punch down the dough and shape it into a loaf or ring. Place on a baking sheet lined with parchment paper.

Cover and let it rise again for 30-45 minutes.

Preheat oven to 180°C (350°F).

Brush the top with egg yolk wash.

Bake for 30-40 minutes, or until golden brown and sounds hollow when tapped.
