
Lignje na žaru (Grilled Squid)

Classic grilled squid, marinated simply and cooked over open flame until tender and slightly charred. A staple of Dalmatian coastal cuisine.

- Squid (cleaned)1 kg
- Olive oil100 ml
- Garlic4 cloves
- Fresh parsley1 bunch
- Lemon2
- Saltto taste
- Black pepperto taste

Clean the squid thoroughly, removing the quill, ink sac, and beak. Rinse under cold water.

Finely chop the garlic and parsley.

In a bowl, whisk together olive oil, chopped garlic, chopped parsley, salt, and pepper.

Add the cleaned squid to the marinade and toss to coat. Let it marinate for at least 15-20 minutes at room temperature.

Preheat your grill to medium-high heat.

Grill the squid for 3-5 minutes per side, depending on thickness, until opaque and lightly charred. Do not overcook, or it will become tough.

Remove from grill, squeeze fresh lemon juice over the squid.

Serve immediately, garnished with extra parsley and lemon wedges.
