  • Small pasta shapes (e.g., ditalini, elbow macaroni)150g
  • Smoked ham or bacon, diced75g
  • Onion, finely chopped1/2 medium
  • Garlic, minced1 clove
  • Vegetable or chicken broth750ml
  • Olive oil1 tbsp
  • Tomato paste (optional)1 tsp
  • Bay leaf1
  • Fresh chives, chopped (for garnish)1 tbsp
  • Saltto taste
  • Black pepperto taste

    In a pot, heat olive oil over medium heat. Add diced ham/bacon and cook until lightly browned. Remove and set aside.

    Add chopped onion to the pot and sauté until softened, about 5 minutes.

    Add minced garlic and optional tomato paste. Cook for 1 minute until fragrant.

    Add the rinsed and drained beans, broth, and bay leaf. Bring to a simmer.

    Add the pasta shapes to the simmering broth. Cook according to package directions until al dente, stirring occasionally. Add water if the stew becomes too thick.
