- Salted Fish (Ikan Masin)150g
- Fresh Pineapple200g, cut into chunks
- Coconut Milk400ml
- Dried Shrimp2 tbsp, soaked and chopped
- Shallots4, sliced
- Garlic4 cloves, sliced
- Galangal1 inch, sliced
- Lemongrass1 stalk, bruised
- Dried Chilies8-10, soaked and blended
- Turmeric Powder1 tsp
- Coriander Powder1 tsp
- Belacan (Shrimp Paste)1/2 tsp, toasted
- Tamarind Paste1 tbsp, diluted in water
- Curry Leaves1 sprig
- Vegetable Oil3 tbsp
- Saltto taste
- Water100ml
- Sugar1 tsp

Rinse and cut salted fish into pieces. Fry until golden brown and set aside.

In a mortar or food processor, pound/blend shallots, garlic, galangal, and soaked dried shrimp into a paste.

Heat oil in a pot. Add the blended paste, dried chilies, belacan, turmeric, and coriander powder. Stir-fry until fragrant and oil separates.

Add lemongrass and curry leaves, stir for another minute.

Pour in coconut milk and water. Bring to a simmer.

Add pineapple chunks and tamarind water. Simmer for 15-20 minutes until pineapple is tender and sauce thickens.

Gently add the fried salted fish. Simmer for 5 minutes. Adjust seasoning with salt and sugar.
