- Cencaru fish4 whole

- shallots8-10
- garlic4-5 cloves
- belacan (shrimp paste)1 tsp
- lemongrass1 stalk
- galangal1 inch piece
- candlenuts3-4
- turmeric powder1/2 tsp
- tamarind paste2 tbsp
- palm sugar1 tbsp
- saltto taste
- coconut oil3 tbsp
- kaffir lime leaves2-3
- pickled vegetables (acar)for serving

Soak dried chilies. Blend chilies with shallots, garlic, belacan, lemongrass, galangal, and candlenuts until smooth.

Heat coconut oil in a wok. Sauté the blended paste with turmeric powder until fragrant and oil separates. Add tamarind paste, palm sugar, salt, and kaffir lime leaves. Cook until the paste thickens and darkens.

Clean the Cencaru fish and make deep scores. Stuff the Nyonya sambal paste generously into the cavity and scores of each fish.

Grill or pan-fry the stuffed fish over medium heat until cooked through and crispy, about 8-10 minutes per side.
