- Garlic4 cloves
- Turmeric powder2 tsp
- Ginger2 cm
- Galangal2 cm
- Lemongrass1 stalk
- Tamarind paste2 tbsp
- Saltto taste
- Water750 ml
- Basil leavesa few

Prepare the spice paste: blend shallots, garlic, turmeric powder, ginger, and galangal until smooth.

Bruise the lemongrass stalk.

Cut pineapple into bite-sized pieces and tomatoes into wedges.

In a pot, combine the spice paste, bruised lemongrass, and water. Bring to a boil.

Add the catfish fillets, pineapple chunks, and tomato wedges. Simmer for about 15-20 minutes, or until the fish is cooked through.

Stir in the tamarind paste and season with salt. Adjust seasoning as needed.
