- Shallots75g
- Garlic25g
- Belacan (shrimp paste)1 tsp
- Ikan Bilis (dried anchovies)50g
- Cooking oilfor frying

- Sugar1 tsp

Rinse the tempoyak gently.

Blend or pound chilies, shallots, and garlic into a paste.

Toast the belacan.

Heat oil in a pan and fry the ikan bilis until crispy. Remove and set aside, reserving some oil.

In the reserved oil, sauté the chili paste until fragrant and oil separates.

Add tempoyak and toasted belacan. Cook for 15-20 minutes, stirring, until thickened.

Stir in most of the crispy ikan bilis (reserve some for garnish).

Season with salt and sugar to taste.
