- Shallots100g
- Garlic cloves4
- Tomatoes (green)50g
- Lime juice1 tbsp
- Salt1 tsp
- Sugar1/2 tsp
- Vegetable oil2 tbsp

Wash and roughly chop the green chilies, shallots, garlic, and green tomatoes.

Sauté the chopped ingredients in vegetable oil over medium heat until softened and fragrant, about 5-7 minutes.

Transfer the sautéed mixture to a mortar and pestle or a food processor.

Add lime juice, salt, and sugar. Pound or process until a coarse paste is formed. Do not over-process into a smooth puree.
