- Galangal1/2 inch piece, chopped
- Turmeric powder1 teaspoon
- Chili powder1 tablespoon (or to taste)
- Lemongrass1 stalk, bruised
- Chicken or seafood stock6 cups
- Tamarind paste1 tablespoon
- Saltto taste
- Black pepperto taste
- Cilantrofor garnish

Clean and cut the crabs into manageable pieces.

In a blender or food processor, combine shallots, garlic, ginger, galangal, turmeric powder, and chili powder. Blend into a paste.

Heat a pot with a little oil (optional, if not using non-stick) and sauté the spice paste until fragrant.

Add the crab pieces and stir-fry for 3-4 minutes.
