  • Chicken breast, thinly sliced150g
  • Shrimp, peeled and deveined100g
  • Eggs, lightly beaten2
  • Bean sprouts1 cup
  • Garlic, minced3 cloves
  • Shallots, thinly sliced2
  • Chili paste (Sambal Oelek or similar)2 tbsp
  • Soy sauce3 tbsp
  • Sweet soy sauce (Kecap Manis)1 tbsp
  • Fish sauce1 tbsp
  • Vegetable oil3 tbsp
  • Chives, cut into 2-inch lengths1/4 cup
  • Lime wedges, for serving4
  • Saltto taste
  • Black pepperto taste
  • Water1/4 cup

    Soak rice vermicelli in warm water until softened, then drain.

    Heat 1 tbsp vegetable oil in a wok or large skillet over medium-high heat. Add beaten eggs and scramble until cooked. Remove and set aside.

    Add remaining 2 tbsp oil to the wok. Add minced garlic and sliced shallots, stir-fry until fragrant.

    Add chili paste and stir-fry for 1 minute until oil separates.

    Add sliced chicken and shrimp, stir-fry until cooked through.

    Add soy sauce, sweet soy sauce, and fish sauce. Stir well.

    Add the soaked and drained rice vermicelli and scrambled egg. Toss well to coat the noodles evenly with the sauce.

    Add bean sprouts and chives. Stir-fry for another 1-2 minutes until bean sprouts are slightly tender.

    Season with salt and black pepper to taste. Add a splash of water if the noodles seem too dry.
