- Rice vermicelli noodles300g
- Dried shrimp50g
- Shallots150g
- Garlic3 cloves
- Chili paste (sambal belacan)3 tbsp
- Tamarind paste2 tbsp
- Shrimp paste (belacan)1 tsp
- Chicken or prawn stock750ml
- Sugar3 tbsp
- Saltto taste
- Vegetable oil3 tbsp
- Prawns200g
- Bean sprouts100g
- Eggs2
- Chives50g
- Lime1
- Crushed peanuts50g
- Chili flakesto garnish

Soak rice vermicelli in warm water until softened, then drain.

Pound or blend dried shrimp, shallots, garlic, and shrimp paste into a fine paste.

Heat vegetable oil in a wok or large pot. Stir-fry the paste until fragrant and oil separates.

Add chili paste and cook for another 2 minutes.

Pour in chicken or prawn stock and tamarind paste. Bring to a boil, then simmer for 15 minutes.

Season with sugar and salt to taste. The gravy should be a balance of sweet, sour, and savory.

Meanwhile, cook prawns until done. Make a thin omelette and shred it. Chop chives.

Blanch bean sprouts briefly.

To serve, place a portion of softened vermicelli in a bowl. Ladle the hot gravy over the noodles.

Top with cooked prawns, shredded omelette, bean sprouts, and chives. Garnish with crushed peanuts and chili flakes. Serve with a lime wedge.
