- Red chilies (bird's eye)2-3
- Candlenuts (kemiri)2
- Shrimp paste (terasi/belacan)1 tsp
- Sweet soy sauce (kecap manis)3 tbsp
- Soy sauce1 tbsp
- Vegetable oil3 tbsp

- Black pepperto taste
- Scallions, chopped2
- Cucumber, slicedfor garnish
- Tomato, slicedfor garnish
- Fried shallotsfor garnish

Prepare the spice paste: pound or blend shallots, garlic, red chilies, candlenuts, and shrimp paste until smooth.

Cut chicken into small cubes or shred cooked chicken.

Heat vegetable oil in a wok or large skillet over medium-high heat. Add the spice paste and stir-fry until fragrant.

Add the chicken and cook until it changes color and is cooked through.

Add the cooled cooked rice to the wok. Break up any clumps and stir-fry to combine with the chicken and spices.

Pour in the sweet soy sauce and soy sauce. Season with salt and black pepper to taste. Stir-fry until the rice is evenly coated and slightly caramelized.

While the rice is frying, fry the eggs sunny-side up.

Stir in most of the chopped scallions into the fried rice.
