- Turmeric powder3 tbsp
- Galangal, grated2 cm
- Ginger, grated2 cm
- Garlic cloves5
- Shallots3
- Coriander seeds1 tbsp
- Lemongrass, bruised1 stalk
- Salt1 tsp
- Black pepper1/2 tsp
- Water50 ml
- Cooking oil, for deep fryingsufficient amount

Prepare the spice paste: Grind turmeric powder, grated galangal, grated ginger, garlic cloves, shallots, and coriander seeds into a smooth paste. A mortar and pestle or food processor can be used.

Marinate the chicken: In a large bowl, combine the chicken pieces with the spice paste, salt, and black pepper. Add water and bruised lemongrass. Mix well to ensure the chicken is evenly coated. Marinate for at least 30 minutes, or preferably 1-2 hours in the refrigerator.

Heat oil: In a deep wok or pot, heat a generous amount of cooking oil over medium-high heat until it reaches about 170-180°C (340-350°F).

Fry the chicken: Carefully add the marinated chicken pieces to the hot oil, ensuring not to overcrowd the pot. Fry in batches if necessary. Fry for about 10-15 minutes, turning occasionally, until the chicken is golden brown, crispy, and cooked through.

Drain and serve: Remove the fried chicken from the oil and drain on a wire rack or paper towels. Serve hot.
