- Rice paper wrappers1 package
- Pork loin or tenderloin1 lb
- Lemongrass (finely chopped)2 stalks
- Garlic3 cloves
- Shallots1
- Fish sauce3 tbsp
- Sugar1 tbsp
- Vegetable oil1 tbsp
- Fresh mint leaves1 cup
- Fresh cilantro sprigs1 cup
- Bean sprouts2 cups
- Cucumber1
- Lime juice2 tbsp

Thinly slice the pork. Finely chop lemongrass, mince garlic and shallots.

Marinate pork with lemongrass, garlic, shallots, fish sauce, sugar, salt, and pepper for at least 20 minutes.

Heat vegetable oil in a pan over medium-high heat. Stir-fry the marinated pork until cooked through and fragrant. Set aside to cool.

Prepare the dipping sauce: Mix fish sauce, water, sugar, and lime juice. Adjust seasoning.

Prepare the vegetables: Wash and dry herbs. Julienne cucumber.

Soften one rice paper wrapper by dipping it briefly in warm water.

Lay the softened wrapper flat. Arrange lemongrass pork, herbs, bean sprouts, and cucumber in the center.

Fold the bottom edge over the filling, then fold in the sides, and roll up tightly.

Repeat with remaining ingredients. Serve immediately with the dipping sauce.
