- Pre-fried rice noodles (banh da chien)10 oz
- Chicken breast, thinly sliced1 lb
- Snap peas1.5 cups
- Mushrooms, sliced1 cup
- Red onion, sliced1/2 cup
- Garlic, minced3 cloves
- Soy sauce3 tbsp
- Hoisin sauce2 tbsp
- Sesame oil1 tsp
- Cornstarch1 tbsp
- Vegetable oil for stir-frying2 tbsp
- Green onions, chopped, for garnish2 tbsp
- Saltto taste
- Black pepperto taste
- Water1/4 cup

Prepare the chicken: Marinate thinly sliced chicken breast with 1 tbsp soy sauce, 1 tsp sesame oil, salt, and pepper. Set aside.

Prepare the sauce: In a small bowl, whisk together 2 tbsp soy sauce, 2 tbsp hoisin sauce, 1 tbsp cornstarch, and 1/4 cup water. Set aside.

Stir-fry the chicken: Heat 1 tbsp vegetable oil in a wok over high heat. Add marinated chicken and stir-fry until cooked through. Remove chicken from the wok and set aside.

Stir-fry the vegetables: Add another 1 tbsp vegetable oil to the wok. Add minced garlic and stir-fry until fragrant. Add snap peas, mushrooms, and red onion. Stir-fry for 3-4 minutes until vegetables are tender-crisp.

Combine and sauce: Return the chicken to the wok with the vegetables. Give the prepared sauce a quick stir and pour it over the mixture. Cook, stirring constantly, until the sauce thickens.

Serve: Arrange the pre-fried rice noodles on serving plates. Spoon the stir-fry mixture over the noodles. Garnish with chopped green onions.
