- Store-bought crispy fried shallots50g

- Neutral oil (e.g., canola)2 tbsp

Prepare glutinous rice according to package directions, mixing in turmeric powder and 1/2 tsp salt. If using quick-cook rice, this should take about 15-20 minutes.

In a small bowl, mash the canned mung beans with 1 tsp sugar and a pinch of salt until smooth. Add a tablespoon of water if needed for consistency.

Warm the neutral oil slightly. If desired, you can briefly fry some store-bought shallots in this oil for a fresher flavor, or use them as is.

To serve, portion the warm sticky rice into bowls. Top with the mashed mung bean paste and a generous amount of store-bought crispy fried shallots. Drizzle with the warmed oil.
