- Cooked rice (day-old preferred)4 cups
- Pre-cooked shredded or thinly sliced beef1.5 cups
- Pickled mustard greens (dưa cải muối chua), chopped3/4 cup
- Garlic, minced2 cloves
- Scallions, chopped1/4 cup
- Fish sauce1.5 tbsp
- Soy sauce1 tbsp
- Vegetable oil2 tbsp
- Egg1
- Saltto taste
- Black pepper

Heat 1 tbsp vegetable oil in a wok or large skillet over medium-high heat. Add minced garlic and stir-fry until fragrant, about 30 seconds.

Add the cooked rice and stir-fry, breaking up clumps, until heated through, about 3-4 minutes.

Push rice to one side. Add remaining 1 tbsp oil. Crack egg into hot oil, scramble, then mix into rice.

Add pre-cooked beef, chopped pickled mustard greens, fish sauce, and soy sauce. Stir-fry until everything is well combined and heated, about 3-5 minutes.

Stir in most of the scallions. Season with salt and pepper to taste.
