  • Cooked rice (day-old)4 cups
  • Chicken breast, diced1/2 cup
  • Eggs, beaten2
  • Frozen mixed vegetables (peas and carrots)1/2 cup
  • Garlic, minced1 clove
  • Fish sauce1.5 tablespoons
  • Vegetable oil2 tablespoons
  • Saltto taste
  • Black pepperto taste
  • Scallions, chopped (for garnish)2 tablespoons

    Heat 1 tablespoon of oil in a wok or skillet over medium-high heat. Add beaten eggs and scramble. Remove and set aside.

    Add remaining oil. Add garlic and stir-fry until fragrant.

    Add diced chicken and cook until no longer pink.

    Add frozen mixed vegetables and stir-fry for 2-3 minutes.

    Add cooked rice, breaking up clumps. Stir-fry until heated through.

    Stir in fish sauce. Add scrambled eggs back and mix.

    Season with salt and pepper.

    Serve hot, garnished with scallions.
