- Cooked rice (day-old)4 cups
- Shrimp, peeled and deveined1/4 cup
- Squid, cleaned and cut into rings1/4 cup
- Eggs, beaten2
- Green onions, chopped1/4 cup
- Red bell pepper, diced1/4 cup
- Garlic, minced2 cloves
- Fish sauce2 tablespoons
- Oyster sauce1 tablespoon
- Vegetable oil2 tablespoons
- Saltto taste
- Black pepperto taste

Heat 1 tablespoon of oil in a wok over medium-high heat. Add beaten eggs and scramble. Remove and set aside.

Add remaining oil. Add garlic and stir-fry until fragrant.

Add shrimp and squid. Stir-fry quickly until just cooked through (shrimp pink, squid opaque). Do not overcook.

Add diced red bell pepper and stir-fry for 1-2 minutes until slightly tender.

Add cooked rice, breaking up clumps. Stir-fry until heated through.

Stir in fish sauce and oyster sauce. Mix well.
