- Jasmine rice, cooked and chilled4 cups
- Pre-cooked mixed seafood (shrimp, calamari)1.5 cups
- Eggs, lightly beaten1
- Garlic, minced1 clove
- Frozen peas1/2 cup
- Bell pepper (any color), diced1/4 cup
- Fish sauce1.5 tablespoons
- Sesame oil1 teaspoon
- Vegetable oil2 tablespoons
- Saltto taste
- Black pepperto taste

Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add the beaten egg and scramble quickly. Remove and set aside.

Add the remaining tablespoon of oil to the wok. Add minced garlic and stir-fry for 15 seconds.

Add the pre-cooked mixed seafood, frozen peas, and diced bell pepper. Stir-fry for 2 minutes until heated through and vegetables are tender-crisp.

Add the chilled jasmine rice to the wok. Stir-fry until heated through, about 3 minutes.

Drizzle fish sauce and sesame oil over the rice. Stir well to combine.
