  • Jasmine rice, cooked and chilled4 cups
  • Pre-cooked mixed seafood (shrimp, calamari)1.5 cups
  • Eggs, lightly beaten1
  • Garlic, minced1 clove
  • Frozen peas1/2 cup
  • Bell pepper (any color), diced1/4 cup
  • Fish sauce1.5 tablespoons
  • Sesame oil1 teaspoon
  • Vegetable oil2 tablespoons
  • Saltto taste
  • Black pepperto taste

    Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add the beaten egg and scramble quickly. Remove and set aside.

    Add the remaining tablespoon of oil to the wok. Add minced garlic and stir-fry for 15 seconds.

    Add the pre-cooked mixed seafood, frozen peas, and diced bell pepper. Stir-fry for 2 minutes until heated through and vegetables are tender-crisp.

    Add the chilled jasmine rice to the wok. Stir-fry until heated through, about 3 minutes.

    Drizzle fish sauce and sesame oil over the rice. Stir well to combine.

    Add the scrambled egg back into the wok. Stir everything together.

    Season with salt and black pepper to taste. Serve immediately.
