- Chicken thighs, bone-in, cut into pieces1 kg
- Fresh ginger, julienned40g
- Lemongrass, tender inner part only, finely minced2 stalks
- Garlic, minced3 cloves
- Shallots, thinly sliced1
- Fish sauce3 tbsp
- Sugar1 tbsp
- Black pepper1 tsp
- Salt1 tsp
- Vegetable oil2 tbsp
- Water1/4 cup
- Chili, sliced (optional)1
- Cilantro, chopped (for garnish)small bunch

Combine chicken pieces with fish sauce, sugar, minced garlic, half of the minced lemongrass, salt, and pepper. Marinate for at least 20 minutes.

Heat vegetable oil in a wok or large skillet over medium-high heat. Add sliced shallots and sauté until fragrant.

Add the marinated chicken and stir-fry until browned on all sides.

Add the remaining minced lemongrass and julienned ginger. Stir-fry for 1-2 minutes until aromatic.

If using, add sliced chili and stir briefly.

Pour in the water, bring to a simmer, reduce heat, cover, and cook for 15-20 minutes until chicken is tender and sauce has thickened.
