- Cooked rice, chilled4 cups
- Cooked chicken, diced1 cup
- Eggs, lightly beaten2
- Frozen mixed vegetables (peas, carrots, corn)1 cup
- Scallions, chopped2 tbsp
- Garlic powder1 tsp
- Soy sauce2 tbsp
- Sesame oil1 tsp
- Vegetable oil1 tbsp
- Saltto taste
- Black pepperto taste

Heat 1 tbsp vegetable oil in a wok or large skillet over medium-high heat. Add the beaten eggs and scramble until just cooked. Remove from wok and set aside.

Add the cooked rice to the wok. Stir-fry for 3-4 minutes until heated through.

Add the cooked chicken and frozen mixed vegetables. Stir-fry for another 3-4 minutes until vegetables are tender-crisp.

Stir in the soy sauce, garlic powder, and sesame oil. Mix well.

Return the scrambled eggs to the wok. Add chopped scallions. Stir to combine.
