- Coarse sea salt200g
- Lemongrass, thinly sliced2 stalks
- Ginger, julienned1 inch piece
- Garlic, minced3 cloves
- Pandan leaves, tied into knots2
- Salt1 tsp
- Black pepper1/2 tsp

Prepare the chicken: Cut chicken into serving pieces. Clean and pat dry.

Marinate the chicken: Mix 1 tsp salt, 1/2 tsp black pepper, sliced lemongrass, julienned ginger, minced garlic, and pandan leaves. Toss with the chicken pieces to coat evenly. Let marinate for at least 15 minutes.

Prepare the salt base: In a heatproof dish or steamer basket, spread a layer of coarse sea salt (about 1 cm thick).

Steam the chicken: Arrange the marinated chicken pieces on top of the salt layer. Cover the dish or steamer basket tightly. Steam over medium-high heat for 25-30 minutes, or until the chicken is cooked through.

Serve: Remove pandan leaves before serving. Serve the steamed chicken pieces hot, with any accumulated juices.
