- Cooked rice (day-old is best)4 cups
- Salted fish (pre-cooked or milder variety), flaked3/4 cup
- Eggs2
- Garlic, minced1 clove
- Frozen peas and carrots mix1 cup
- Vegetable oil2 tbsp
- Soy sauce1.5 tbsp
- Sesame oil (optional)1 tsp
- Green onions, chopped1/4 cup
- Saltto taste
- Black pepperto taste

Heat 1 tbsp of oil in a wok or large skillet over medium-high heat. Add minced garlic and stir-fry until fragrant.

Add the beaten eggs and scramble them quickly. Break into small pieces.

Add the cooked rice and frozen peas and carrots mix. Stir-fry, breaking up rice clumps, until heated through and vegetables are tender.

Add the flaked salted fish and soy sauce. Stir-fry to combine everything evenly.

Stir in the sesame oil (if using) and most of the green onions. Season with salt and pepper to taste.
