- Duck breast or thigh meat500g, cut into cubes
- Fresh ginger25g, grated
- Fish sauce3 tbsp
- Sugar1.5 tbsp
- Water1/2 cup
- Black pepper1/2 tsp
- Vegetable oil1 tsp
- Scallionsfor garnish

In a bowl, combine duck cubes with 2 tbsp fish sauce, 1/2 tsp black pepper, and grated ginger. Marinate for 15 minutes.

Heat vegetable oil in a pan over medium-high heat. Add sugar and caramelize until amber.

Add the marinated duck and sear until browned on all sides.

Add the remaining 1 tbsp fish sauce and 1/2 cup water. Bring to a simmer.

Cover and cook for 20-25 minutes, or until duck is cooked through and sauce has slightly thickened.
