- Rice flour mix for savory crepes200g
- Turmeric powder1/2 tsp
- Coconut milk300ml
- Water150ml
- Pre-cooked small shrimp150g
- Bean sprouts150g
- Scallions2 stalks
- Fish sauce2 tbsp
- Vegetable oilfor frying
- Mint leavesfor serving

Mix rice flour mix, turmeric, coconut milk, and water to form a smooth batter. Stir in chopped scallions and 1 tbsp fish sauce. Let rest for 10 minutes.

Prepare a simple dipping sauce by mixing 2 tbsp fish sauce with 2 tbsp water and a squeeze of lime (optional).

Heat a lightly oiled non-stick skillet over medium-high heat. Add a handful of pre-cooked shrimp and bean sprouts. Pour about 1/4 of the batter over the filling, tilting the pan to create a thin crepe.

Cook for 2-3 minutes until the edges are golden. Fold in half and slide onto a plate.

Repeat for the remaining batter. Serve hot with mint leaves and dipping sauce.
