- Rice flour mix for savory pancakes2 cups
- Canned coconut milk1.5 cups
- Turmeric powder1 tsp
- Salt1 tsp
- Shrimp1/2 lb, chopped
- Scallions1/4 cup, chopped
- Vegetable oil1/4 cup
- Water1/2 cup
- Fresh herbs (mint)for garnish
- Sweet chili saucefor serving

In a bowl, combine rice flour mix, coconut milk, turmeric, salt, and water. Stir until smooth. Mix in half the scallions and chopped shrimp.

Heat a non-stick skillet or bánh khọt mold over medium heat. Add oil.

Pour small amounts of batter into the hot pan to form mini pancakes. Cook for 2-3 minutes per side until golden and cooked through.

Garnish with remaining scallions. Repeat until all batter is used.
