Cut the fish into 1.5-inch cubes.

In a bowl, whisk together turmeric powder, grated ginger, minced garlic, fish sauce, lime juice, 1 tbsp vegetable oil, salt, and pepper. Add the fish cubes and toss to coat. Marinate for at least 20 minutes.

While the fish marinates, prepare the peanut sauce: whisk together peanut butter, coconut milk, honey/sugar, and a pinch of salt until smooth. Add a little water if needed to reach desired consistency.

Thread the marinated fish cubes onto the soaked wooden skewers.

Preheat grill or grill pan to medium-high heat. Brush lightly with remaining vegetable oil.

Grill the fish skewers for 3-4 minutes per side, until cooked through and lightly charred.

Arrange the grilled fish skewers on a platter. Garnish with chopped cilantro, mint, and crushed peanuts.
