- Vegetable oil1/2 cup
- Fish sauce2 tablespoons
- Sugar1 teaspoon
- Saltto taste
- Black pepperto taste
- Fresh red chili slicesfor garnish
- Cilantro2 tablespoons, chopped, for garnish

Preheat your grill or broiler to high heat.

Clean the oysters thoroughly.

Prepare the garlic chili oil: Heat vegetable oil in a small saucepan over medium heat. Add minced garlic and chopped red chilies (or chili flakes). Sauté until garlic is fragrant and lightly golden, about 1-2 minutes. Be careful not to burn the garlic.

Stir in the chopped scallions, fish sauce, and sugar. Cook for another 1-2 minutes until scallions are wilted. Season with salt and pepper to taste. Remove from heat.
