- Pre-made rice cake batter (Bánh đúc mix)500g
- Water500ml
- Salt1/2 tsp
- Ground chicken250g
- Sliced mushrooms (fresh or canned)100g
- Garlic powder1 tsp
- Fish sauce1.5 tbsp
- Sugar1/2 tsp
- Vegetable oil2 tbsp
- Fried shallots30g
- Scallions1/4 cup, chopped

Prepare the bánh đúc batter according to package instructions, adding salt and water. Steam in a greased 8x8 inch pan for 15-20 minutes until set. Let cool slightly.

Heat vegetable oil in a pan. Sauté ground chicken with garlic powder until cooked through. Add sliced mushrooms, fish sauce, and sugar. Cook for 5 minutes until slightly reduced.

Cut the slightly cooled bánh đúc into bite-sized pieces.

Serve the bánh đúc pieces in bowls, topped with the chicken and mushroom mixture, fried shallots, and chopped scallions.
