- Onion1/4
- Garlic1 clove
- Fish sauce1 tbsp
- Sugar1/2 tsp
- Water30ml
- Vegetable oil1 tbsp
- Saltto taste
- Black pepperto taste
- Scallionsfor garnish
- Chili flakesfor garnish

Finely chop onion and garlic. Heat 1/2 tbsp of oil in a skillet over medium heat. Sauté onion and garlic until fragrant.

Add fish sauce, sugar, and water. Stir to combine and bring to a simmer. Add pre-cooked ham or charcuterie and heat through.

Push the mixture to one side. Add the remaining 1/2 tbsp of oil and crack the eggs into the skillet. Fry to desired doneness.
