    Prepare the Chả (Steamed Egg Meatloaf): Finely mince pork shoulder. Finely chop soaked wood ear mushrooms and glass noodles. Mince shallots and garlic. Whisk 4 eggs in a bowl. Add pork, mushrooms, noodles, shallots, garlic, 2 tbsp fish sauce, 1 tbsp sugar, 1/2 tsp salt, and 1/4 tsp black pepper. Mix well. Steam in a greased pan until cooked. Let cool, then slice.

    Marinate the Sườn: Score pork chops. Combine 3 tbsp fish sauce, 2 tbsp sugar, 1 tsp minced garlic, 1/2 tsp minced shallots, 1/2 tsp black pepper, and 1 tbsp vegetable oil. Marinate pork chops for at least 1 hour.

    Prepare the Pickled Vegetables (Đồ Chua): Julienne carrots and daikon. Mix with 2 tbsp sugar, 2 tbsp white vinegar, and 1/2 tsp salt. Let sit for at least 30 minutes.

    Cook the Broken Rice: Rinse broken rice and cook according to package directions.

    Grill the Sườn: Grill marinated pork chops over medium-high heat until cooked through and nicely charred, about 4-6 minutes per side.

    Fry the Egg: Heat 1 tbsp vegetable oil in a non-stick pan. Fry 2 eggs sunny-side up until whites are set and yolks are runny.

    Prepare the Nuoc Cham: Whisk together 4 tbsp fish sauce, 4 tbsp sugar, 4 tbsp water, 1 minced garlic clove, and a squeeze of lime juice. Adjust to taste.

    Assemble the dish: Serve broken rice topped with a grilled pork chop, a slice of chả, and a fried egg. Garnish with sliced cucumber, tomato, and pickled vegetables. Serve with nuoc cham.
