- Goby fish500g
- Fish sauce3 tbsp
- Pre-made caramel sauce (nuoc mau)3 tbsp
- Water2 tbsp
- Garlic1 clove, minced
- Black pepper1/2 tsp
- Vegetable oil1 tbsp
- White sesame seeds1 tsp, for garnish

Clean and prepare the goby fish. Marinate with 1 tbsp fish sauce and minced garlic for 10 minutes.

Heat vegetable oil in a pot over medium-high heat. Add the marinated fish and sear lightly.

Add the pre-made caramel sauce, 2 tbsp water, remaining 2 tbsp fish sauce, and black pepper to the pot. Stir to coat the fish.

Bring to a simmer, then reduce heat to low, cover, and cook for 15 minutes, or until the sauce thickens and the fish is cooked.

Garnish with white sesame seeds before serving.
