- Mackerel fillets, pre-cut500g
- Canned diced tomatoes1 can (400g)
- Fish sauce2.5 tbsp
- Sugar1 tbsp
- Garlic powder1 tsp
- Vegetable oil1 tbsp
- Water50 ml
- Black pepperto taste
- Saltto taste
- Cilantrofor garnish

Rinse and pat dry the pre-cut mackerel pieces.

Heat vegetable oil in a skillet or pot over medium heat. Add garlic powder and stir for 30 seconds.

Add the canned diced tomatoes (undrained), fish sauce, sugar, and a pinch of salt. Stir and bring to a simmer.

Gently place the mackerel pieces into the simmering sauce. Add water.

Cover and cook for 15-20 minutes, or until the fish is cooked through and the sauce has reduced slightly.

Season with black pepper. Garnish with fresh cilantro.
