- Ốc len (mud snails)750 g
- Coconut milk300 ml
- Lemongrass paste2 tbsp
- Minced garlic2 tbsp
- Minced shallots1 tbsp
- Sliced red chili1-2
- Chopped cilantro or mint1/4 cup
- Fish sauce2 tbsp
- Sugar2 tsp
- Vegetable oil1 tbsp
- Saltto taste
- Black pepperto taste
- Water50 ml

Clean the snails thoroughly by soaking in salted water for at least 2 hours, changing water frequently. Rinse well.

Heat vegetable oil in a pan over medium-high heat. Add lemongrass paste, minced garlic, and minced shallots. Stir-fry until fragrant.

Add the cleaned snails and stir-fry for 2 minutes.

Pour in coconut milk and water. Add fish sauce and sugar. Bring to a simmer.

Simmer for 10-15 minutes until snails are cooked and sauce thickens slightly.

Stir in sliced chili and chopped cilantro/mint. Cook for 1 minute.
