- Cá kèo (small catfish), cut into pieces500g
- Rau răm (Vietnamese coriander), chopped1/2 bunch
- Fish sauce3 tbsp
- Sugar1.5 tbsp
- Black pepper1/2 tsp
- Garlic, minced2 cloves
- Shallots, minced1/2
- Cooking oil1 tbsp
- Water1/3 cup

Clean and cut the cá kèo into manageable pieces. Marinate with 1 tbsp fish sauce, minced garlic, minced shallots, and black pepper for 10 minutes.

Heat oil in a pan over medium-high heat. Add the marinated fish pieces and sear quickly on all sides.

Pour in the remaining fish sauce, sugar, and water. Bring to a boil.

Reduce heat to medium-low, cover, and simmer for 15 minutes, allowing the sauce to thicken and the fish to cook through.

Stir in the chopped rau răm during the last 2 minutes of cooking.

Serve immediately.
