- Jasmine rice2 cups
- Pre-cooked chicken (rotisserie or poached)2 cups, shredded
- Chicken broth3.5 cups
- Turmeric powder1 tsp
- Garlic powder1/2 tsp
- Fish sauce1 tbsp
- Saltto taste
- Black pepperto taste
- Lime1, cut into wedges
- Cilantro1/4 cup, chopped
- Red onion1/4, thinly sliced

Rinse the jasmine rice thoroughly. Set aside.

In a pot or rice cooker, combine the rinsed rice, chicken broth, turmeric powder, garlic powder, fish sauce, salt, and pepper. Stir well.

Cook the rice according to your rice cooker's instructions or on the stovetop until tender and fluffy.

While the rice cooks, gently warm the shredded pre-cooked chicken. You can do this in a pan or microwave.

Prepare a simple chicken consommé by heating 1 cup of chicken broth with a pinch of salt and pepper.

To serve, portion the turmeric rice onto plates. Top with the warmed shredded chicken, chopped cilantro, and thinly sliced red onion.
