- Black carp (cá trắm)600g, cut into 1.5-inch pieces
- Minced galangal2 tbsp
- Minced shallots2 tbsp
- Minced garlic1 tbsp
- Fish sauce (nước mắm)3 tbsp
- Sugar1.5 tbsp
- Water1/3 cup
- Black pepper1/2 tsp
- Salt1/2 tsp
- Cooking oil1 tbsp

Combine fish pieces with 1 tbsp fish sauce, 1/2 tsp salt, and 1/2 tsp black pepper. Let marinate for 10 minutes.

Heat cooking oil in a pan over medium-high heat. Sauté minced shallots and garlic until fragrant.

Add the minced galangal and sauté for 30 seconds.

Add the marinated fish pieces to the pan and sear lightly on all sides.

In a small bowl, whisk together the remaining 2 tbsp fish sauce, 1.5 tbsp sugar, and 1/3 cup water.

Pour the sauce mixture over the fish. Bring to a simmer.

Reduce heat to medium-low, cover, and cook for 15-20 minutes, or until fish is cooked and sauce has reduced to a glaze.
