- Cooked chicken (rotisserie or poached)1 lb
- Jasmine rice1.5 cups
- Chicken broth3 cups
- Garlic2 cloves, minced
- Ginger1 tsp, grated
- Scallion oil or sesame oil1 tbsp
- Saltto taste
- Black pepperto taste
- Store-bought chili garlic saucefor serving
- Cilantrofor garnish
- Cucumberfor garnish

Cook the rice: Rinse jasmine rice. Sauté minced garlic and grated ginger in a pot with a little oil. Add rice and stir to coat. Add chicken broth and salt. Cook rice according to package directions or in a rice cooker.

Prepare the chicken: Slice the cooked chicken into serving pieces.

Assemble the dish: Fluff the cooked rice and serve a generous portion on a plate. Top with sliced chicken. Drizzle with scallion oil or sesame oil.

Serve: Garnish with fresh cilantro and cucumber slices. Serve immediately with chili garlic sauce on the side.
